ingrediants are: extra virgin olive oil [ certainly the best in the world ], hard wheat pasta, the freshest fish,
mussels and "ricci" [ an italian shell fish ]. Vegetables are also featured, such as peas and beans, various
types of greens, a very particular and decisive taste and the famous turnip tops, which cooked along with
orecchiette [ little disks, ears, of hard wheat flour made by hand ] is the flagship dish of this region.
Bread and other delights cooked in the oven are another part of divers cooking of this region; many types of
bread can be found in puglias' bakerys among which are Altamura bread, made with ordinary flour and fine
yellow flour, bread from Noci made with flour with is both soft and crunchy, bread from Assunta which is very similar to the bread made in the farmhouses of years gone by.

Bari's History
The origins of Bari are very old, but not well established. Items dating to the Bronze Age have been found in
the oldest part of the town; however, most of the historians agree that the town, as social organization, has
been founded between 1600 and 1100 B.C. by Illyrians, coming from the Balcanian peninsula, on the opposite
side of the Adriatic sea. The name probably derives from that of Barione, the leader of one of these Illyrian groups...
