The first inhabitants of Québec - for the most part peasants - prepared hearty meals to help them face the harshness of everyday life. A style of home cooking, based on the French tradition, developed over the centuries and featured local fish, game, fruits and vegetables. Tourtière, cipaille (a layered meat pie), baked beans, roast pork, cretons (a kind of pork pâté), sugar pie and buckwheat cakes are just a few examples of these traditional dishes. Some remain everyday fare, while others are served on special occasions, such as Christmas and during the holiday season. In the spring, these rustic dishes are served with pleasure at Québec's sugar shacks.

The first European explorer of what is now Quebec was Jacques Cartier, who planted a cross in the Gaspé in 1534 and sailed into the St. Lawrence River in 1535. Quebec City was founded near the site of Stadacona, a village populated by Iroquoians when Jacques Cartier explored Canada. However, the village was no longer there when Samuel de Champlain established the Habitation de Quebec in 1608...
