Castilla la Mancha's cuisine is comprised of a great variety of traditional, hearty yet simple dishes which are prepared using elementary ingredients such as bread, meat, vegetables and accompanied by a wide range of wine, sheep's cheese and desserts.

Many traditional dishes originated with the shepherds and hunters, even the famous manchego cheese.

History Castile Mancha

The origin of Castile-La Mancha lay in the Muslim period between the 8th and 14th century. Castile-La Mancha was the region of many historical battles between Christian crusaders and Muslim forces during the period from 1000 to the 13th century. It was also the region where the Crown of Castile and Aragon were unified in 1492 under Queen Isabel and King Ferdinand.

  El Greco in Toledo: National Monuments of Spain   -   Fernando Marias (Author)
El Greco, whose real name was Domenikos Theotocopoulus, was born in Crete, trained in High Renaissance Venice and Rome, and moved to Toledo in 1577. He saw himself as the epitome of the artist as courtier and philosopher, a contrast to the craftsman who emphasised the medieval aspects the city, including 'El Espolio' in the cathedral and 'Burial of the Count of Orgaz' in Santo Tome. His landscape paintings of the city are unparalled - and even his monumental rendering of Laocoon refers to his adopted city which, in legend, was founded by the Trojans. This stunningly illustrated title is a highly informative study of El Greco's paintings of the landscape and monuments of the city of Toledo.
