National Park

 National Park Lauwersmeer
In the northmost part of the Netherlands, on the border between the provinces of Friesland and Groningen, lies a unique nature reserve of 6,000 hectares, Lauwersmeer National Park. In this vast and vibrant landscape the tranquillity is almost tangible. Up until 30 years ago the Waddenzee had the upper hand here, but to combat flooding a dike was built and as a result the Lauwersmeer was created. It was soon apparent that an exceptional environment had developed.
The Lauwersmeer region is now renowned for it's fields of purple orchids, flowering in May and June. Among the daily visitors are rare birds such as the Black-winged Stilt (Himantopus himantopus), the Hen Harrier (Circus cyaneus) and the Bearded Tit (Panurus biarmicus). During the winter hundreds of thousands of migrating birds stay here, the Bewick's Swan (Cygnus colobianus), Wigeion (Anas penelope) and the Barnacle Goose (Branta leucopsis) among them.
By grazing Scottish Highlanders and Konik horses the landscape remains 'open'. Visitors can cycle, trek, canoe, sail and birdwatch.

Zuurkoolstamppot [ stamppot met kool vers vanuit het vat ], Hutspot [ stamppot met wortels met uien ], Hete bliksem [ stamppot met zoete appels en ui ], Moes [ stamppot met boerenkool vers van het land ], Stimstam [ stamppot met rauwe andijvie ], Bruine bonen of kapucijners, Gebakken spekjes met ui in jus [ uit grootmoeders tijd ], Kaanjes [ gebakken vet ], bijgerecht van voor de oorlog.

Groningen was een van de eerste provincies waar men met specerijen aan de gang ging. Ze werden verwerkt in de Groningerkoek en de fijnere Oudewijvenkoek. Deze peperkoeken zijn al eeuwenoud en in den beginne een imitatie van de nog oudere Deventerkoek, een luchtige honingkoek bereid met roggemeel en honing. Zie o.a. de peperkoek van Peijnenburg [ Door de melange van specerijen zoals onder andere zoethout , kaneel, koriander, steranijs én peper is Peperkoek een stevig gekruide koek op basis van de vertrouwde Peijnenburg kwaliteit en ook deze koek bevat minder dan 2% vet ].
